应用范围：天然甜味剂，可广泛应用於营养保健品、婴幼儿食品、膨化食品、调味料、中老年食品、固体饮料、糕点、冷食、方便食品、速溶食品等。
罗汉果为卫生部首批公布的药食两用名贵中药材，其所含罗汉果甜苷比蔗糖甜300倍，不产生热量，是饮料、糖果行业的名贵原料，是蔗糖的替代品。
罗汉果是我国特有的珍贵葫芦科植物，素有良药佳果之称。果实中含罗汉果甜苷，较蔗糖甜300倍；另含果糖、氨基酸、黄酮等。
果中含非糖甜味的成分，主要是三萜甙类：罗汉果甜苷（mogroside)Ⅴ及Ⅳ，苷Ⅴ的甜度是蔗糖（srcrose)的256-344倍，苷Ⅳ的甜度为蔗糖的126倍。还含大量葡萄糖（glucose)[6],果糖（fructose)占14%。又含锰、铁、镍、硒、锡、碘、钼等26种无机元素、蛋白质、维生素（vitamin C)等。
种仁含油脂41.07%，其中脂肪酸有：亚油酸（linoleic acid)，油酸（oleic acid)，棕榈酸（palmitic acid)，硬脂酸（stearic acid)，棕榈油酸（palmitoliec acid)，肉豆蔻酸（myristic acid)，月桂酸（lauric acid)，癸酸（decanoic acid)。
