抗性糊精由淀粉加工而成，是将焙烤糊精的成分用工业处理并炼成的一种葡聚糖，属水溶性膳食纤维。
抗性糊精为白色到淡黄色粉末，略有甜味，无其他异味，水溶性可以，10% 水溶液为透明或淡黄色，pH值为4．0～6．0．抗性糊精的水溶液黏度低，并且黏度值随剪切速率和温度变化而变化。
1，在乳制品中的应用
抗性糊精可以像砂糖或糖类一样添加, 不影响食物风味,可以应用于制作食物纤维、乳制品或食物纤维的乳饮料中. 可替换一部分砂糖或脂肪来调制冰淇林、酸奶饮料等.
2，在婴幼儿食品中的应用

3，在面制品中的应用
